Sooo, I bought a rainbow trout today, whole, dressed. See, Fellini's in downtown serves absolutely amazing whole grilled trout which has no bones whatsoever. So I thought, sure I can debone a trout and have it look whole, with head and tail and everything. Ok, right, first of all the fish had scales. I have never cleaned a fish from scales, daddy was fishing and daddy always cleaned the catch. Mom cooked the catch, I ate it. SO I took the fish gently as a baby and started moving the knife against the scales fast. Ok, 10 minutes later I was covered in tiny scales, but the fish was clean. Naked.
Then came the time to debone. I honestly tried. I never thought the thing had so many bones and its backbone is so different from what I imagined. I failed to debone discretely and tried to fillet the trout. The results are in the trash can. Well I could have tried to make soup out of all the pieces, but....oh well.
Right, so dinner. Well I failed with my beloved trout but I have two backup tilapia fillets. Ha-ha! So the fillets are marinating in a mix of fresh sage, fresh oregano and rosemary, lemon zest, lemon juice, salt, pepper and olive oil. Inside the oven there's a halved butternut squash (two halves, yeah) rubbed with olive oil, sprinkled with nutmeg, allspice, salt, and a hint of cinnamon. So, hubby comes in half hour, I will fire the grill. In a psychological state I am today I definitely need to work with fire. We have cedar planks soaked and the fish will go on them and inside the grill. The butternut squash will also finish up in the grill to get some of that smoky flawor. On the side grape tomatoes and some grapes. Mmm. I don't know if normally butternut squash goes with fish but today it will.
Jon, Jesse, dears, I am not adding movie application to take a Prince's Bride quiz and fail it. It is enough that I have probably failed my real test today. Have mercy on me gentlemen.
